Carrot Cake

  • 1 cup of oil
  • 1/2 cup shortening 
  • 4 eggs
  • 2 cups sugar
  • 2 teaspoons Vanilla
  • 2 cups flour
  • 1 teaspoon cinnamon
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 3 cups of shredded Carrots
  • 1 cup of raisins (golden)
  1. Cream oil, shortening and eggs until light and fluffy
  2. add sugar and vanilla
  3. In a separate bowl, combine flour and cinnamon, baking soda,salt.
  4. Add dry ingredients to creamed mixture mix well
  5. fold in carrots and raisins ( nuts optional)
  6. bake at 350 for 45 min
