Salt-Crusted Shrimp

 

Ingredients:

 

Grated zest 
and juice of 
2 lemons
1/2 cup water
2 pounds 
coarse 
sea salt
1 pounds 
jumbo 
shell-on 
shrimp
In a bowl, mix together the lemon, 
water, and salt. Spread a layer of the 
mixture in a baking dish and arrange 
shrimp on top. Cover with the rest 
of the mixture and pat down
Preheat oven to 475 degrees and 
bake for 15 minutes, or until the 
salt crust is hard and golden. Crack 
crust and remove shrimp.
Roasted Chipotle,lime, Aioli would be a perfect dipping sauce for these shrimp.
