Witlof, also called endive, provides dietary fibre and contains some vitamin C and folate.
Buying and storing
Look for tightly packed leaves with fresh tips. Light can make witlof turn dark green and bitter-tasting, so store in a brown paper bag in the crisper for up to two days.
Preparation
Remove damaged leaves and wipe with a damp cloth. Simply break off leaves if using in a salad. To cook, slice a thin portion off the end and leave whole.
Cooking tips
- Serve torn leaves with other salad greens, such as spinach.
- Fill individual leaves with dips and fillings and serve with cocktails.
- Braise whole in white wine and serve with roasted meats.
