Banana Fritters

1 Jul
  • 6 very ripe bananas (the darker the better)
  • 1tbsp white sugar
  • pinch of nutmeg
  • 1 egg
  • 4oz milk
  • flour (to right consistency )
  • confection sugar
  • baking soda 1/4 teaspoon
  1. Mash bananas
  2. add sugar and nutmeg
  3. add beaten egg
  4. Add 1/4 cup of flour at a time and adjust with milk ( more flour they become cake like and a bit dry, less flour they will be moist and truly more fritter like) the mix should be able to scoop up with a spoon .
  5. in a teflon pan add some oil fry on both sides at medium heat till golden
  6. Sprinkle with confection sugar and serve right away
